Saffron is one of the world's most labour-intensive spices. During the short harvest period, the delicate threads are carefully plucked from the flowers of Crocus sativus. Producing just one kilogram of saffron requires approximately 150,000 flowers, illustrating the care and precision behind every thread.
The quality of Krokos Kozanis PDO is defined by characteristics including its aroma, colour, thread size, essential-oil content and colouring strength. Its profile is shaped by two key compounds, crocin and picrocrocin. Through natural chemical reactions, picrocrocin is converted into safranal, the main component of the essential oil responsible for saffron's characteristic aroma, while crocin forms the main pigment, crocetin, which gives the spice its distinctive colour.

Ingredients
- 2 cups milk or unsweetened oat milk
- 8–10 threads PDO Krokos Kozanis saffron
- 2 tbsp apple cider or unsweetened apple juice
- 1–2 tsp pure Canadian maple syrup
- ½ tsp vanilla extract
- A pinch of cinnamon
- Optional: a pinch of nutmeg
Method
- Gently warm the milk without bringing it to a boil.
- Add the saffron threads and allow them to infuse for 5–10 minutes.
- Stir in the apple cider, maple syrup, vanilla and cinnamon.
- Whisk or froth until lightly foamy.
- Divide between two mugs and finish with cinnamon or nutmeg.
Tip: A small quantity of saffron is enough to impart its characteristic colour and aroma. Store saffron in a cool, dry place away from moisture and direct sunlight to preserve its quality. PDO Krokos Kozanis has a shelf life of up to five years when properly stored.

The campaign: "Premium European Products: Better Knowledge, Better Choices" is co-funded by the European Union and managed by the National Union of Agricultural Cooperatives of Greece (ETHEAS) and the Latvian Dairy Committee (LDC). It aims to promote exquisite added-value products in Canada, South Korea, and Malaysia, including PDO olive oils, table olives, dried grapes, saffron, hard cheese, mastic gum, and mastic oil from Greece, as well as dairy products, candied fruits, chocolates, confectionery, and salty snacks from Latvia. It focuses on rural and cooperative development, supports member activities domestically and internationally, issues opinions on agricultural matters, supervises cooperative promotion, and conducts educational activities. The Latvian Dairy Committee (LDC), established in 1995, represents Latvian milk producers and aims to protect their interests. It consists of 17 members producing approximately 80% of industrially produced milk in Latvia.
