MONTREAL, March 8, 2012 /CNW Telbec/ - The idea was born in a family sugar bush. The daughter and son of a maple syrup producer, Élodie and Mathieu Fleury, both concerned about the amount of maple water wasted annually in the production of Quebec's famous maple syrup, founded La maison Eau Matelo to reclaim this resource and create DE L'AUBIER sap water, the only still water of its kind in the world. Made from the maple sap harvested during spring flows, this new water will be on our tables starting March 21. The 2012 sap flow will be offered in restaurants, hotels and fine grocery stores. Restaurant La Cabane, which operates from March 8 to April 15 on the Quays of the Old Port of Montreal, will preview the water when it opens.
"DE L'AUBIER sap water is a product of Quebec's native soil that perfectly complements the dishes I offer at La Cabane," says chef Martin Juneau. "In addition, the approach behind the product is original and promising in many respects."
When maple syrup producers filter the harvested maple sap to concentrate its sugars, 15% of the initial volume is boiled to make syrup, while 85% is commonly discharged into the neighbouring watercourses. This means that nearly 850 million litres of maple water are abandoned by maple syrup producers every year throughout Quebec.
"Out of a concern for preservation, we took the initiative of recovering and bottling this water to create an exceptional table water," explains Mathieu Fleury, a food process engineer and co-founder of La maison Eau Matelo.
DE L'AUBIER sap water bears the name of its origin, the "aubier", or sapwood, the living part of the tree that is renewed every year underneath the bark and through which the raw sap rises from the roots to the branches. It is not a sweet water or a maple-flavoured water, but a premium water with a very special character.
"DE L'AUBIER sap water has patents pending in Canada and the United States," specifies Élodie Fleury, a lawyer and co-founder of La maison Eau Matelo. "It is 100% natural, renewed annually by the forest, the native soil and the climate specific to our region of the planet, and it is the first still water of plant origin coming from the maple tree. With the freshness of spring, DE L'AUBIER sap water has a subtle floral flavour. It is recommended that it be served in a stemmed glass to reveal the amazing smoothness conferred by its origin.
