Normand Laprise and Christine Lamarche are adding a new address to the Signé Toqué group
MONTRÉAL, May 21, 2019 /CNW Telbec/ - Chef Normand Laprise and Christine Lamarche, co-owners of the renowned Toqué! and Brasserie T !, are opening a brand new restaurant, Beau Mont. The establishment is located at 950 Beaumont Street in Parc-Extension, a booming Montréal neighborhood. This fall, a grocery-counter section will also open, allowing customers to bring home some of the high quality local products found in the restaurant. This project was developed in collaboration with creative agency Sid Lee and Sid Lee Architecture.
Putting the spotlight on local products
Beau Mont joins the culinary philosophy of the group by inviting the public to see beyond the plate and discover the culinary heritage of Quebec. This commitment is part of Chef Normand Laprise's broader vision of ensuring the long-term survival of Quebec producers, which has been its trademark for nearly 30 years. "We need to continue putting forward the work of our local producers. Supporting them is an essential value for me, he says. Traceability is therefore the inevitable way to value their work." This new project will help develop and push the group's culinary philosophy even further.
Cultivating the art of simplicity
Halfway between the elegance of Toqué! and the conviviality of Brasserie T !, Beau Mont offers a simple and tasty market cuisine, featuring traceable seasonal products, fresh vegetables and clean preparations while acting as a showcase for small Quebec artisans. The restaurant menu will be constantly evolving to adapt to the seasons and respect the capacity of local producers. The open kitchen also allows to admire the brigade at work.
A décor paying tribute to our culinary history
In the spirit of a workshop-grocery store, the world of Beau Mont is raw and built on "found objects." The chairs, stools and table legs were taken from previous Toqué! locations and have been restored. Mementos collected from the chef's trips and meetings complement the decor and everyday tools in a simple and lively amalgam.
"In imagining the Beau Mont, we opened up and learned about Normand Laprise as a person. The experience that is now offered to customers is very personal and unpretentious," says Jean Pelland, Architect and Senior Partner at Sid Lee Architecture.
The photos exhibited in the restaurant are signed Dominique Malaterre, renowned photographer and regular collaborator of the various projects of the family. "The great cathedrals are not just built of stone: the immensity of the mysterious landscapes of Kamouraska is, in this photographic installation, echoing the nobility of the artisans of Quebec gastronomy." explains the artist.
The 70-seat restaurant is currently open 5 days a week and will be open 7 days as of mid-June.
