    -   Avoid broken glass on patios, decks and beaches with wine

    Blueberry Pancakes

    Soy beverages in Tetra Pak cartons are a great alternative to buttermilk
    and it is full of vitamins and minerals. This is a quick breakfast you
    can feel good about feeding your family.

    1 1/2 cups all-purpose flour
    3 1/2 teaspoons baking powder
    1 teaspoon salt
    1 1/4 cups vanilla soy beverage in Tetra Pak cartons
    1 egg
    3 tablespoons butter, melted
    1 cup blueberries
    2 tablespoons vegetable oil

    Sift flour, baking powder and salt into a large bowl. Whisk soy milk, egg
    and melted butter together. Make a well in the centre of the dry
    ingredients and pour milk mixture in. Fold ingredients together. Fold in
    blueberries. Heat a skillet and add oil. Scoop approximately 1/4 cup of
    batter onto the skillet. Brown on both sides and serve hot with Canadian
    Maple Syrup.


    For an easy afternoon snack, whip up this delicious soy smoothie, using
    Tetra Pak packaged soy beverage. Use your favourite local berries for a
    treat the whole family will love!

    2 cups (500mL) Tetra Pak packaged soy beverage
    8 ice cubes
    2 cup fresh berries
    2 bananas
    4 tablespoons (30mL) honey

    Blend all ingredients together and pour into large serving glass.

    Roasted Tomato Soup

    Broth packaged in Tetra Pak cartons is convenient for soups, stews and
    stir-fries. Serve this hearty soup with some local country bread and your
    favourite wine - packaged in Tetra Pak cartons for lightweight recyclable
    convenience, of course!

    4 medium tomatoes, halved
    2 red peppers, halved and seeded
    1 small onion, large dice
    4 cloves garlic, peeled
    3 tablespoons olive oil
    2 sprigs thyme
    1 cup Tetra Pak packaged vegetable broth

    Preheat oven to 350 degrees. Toss tomatoes, peppers, onion and garlic on
    a roasting tray with oil, salt, pepper and thyme. Roast for approximately
    40 minutes or until vegetables are brown. Let cool slightly and peel skin
    off of peppers. Puree roasted vegetables in blender in batches with stock
    and add to pot (for smoother texture use a ricer). Bring to the boil.
    Reduce heat and simmer before serving.
