Bardō finds its fourth home inside the restored Walser Building, with a gorge-side patio to follow in Spring 2027.
ELORA, ON, Sept. 3, 2026 /CNW/ -- Bardō, one of Ontario's most beloved restaurants, announced today its expansion into Elora, Ontario. Set to open in October 2026, the fourth location will open inside the newly restored Walser Building, bringing its Italian-inspired menu, its easy unhurried atmosphere, and its founding conviction, "Good Ingredients Matter" to the heart of downtown Elora.
A Pearle Hospitality original, Bardō was built from scratch on a love of honest, ingredient-led cooking. Quietly sharpened with the input of some of Canada's most respected culinary talent, Michelin-starred chef Patrick Kriss and the team at Alo Food Group have worked alongside Pearle Hospitality to fine-tune the menu, beverage program, and service across Bardō Elora, and all existing locations.
"We've watched Bardō become genuinely woven into the neighbourhoods they are a part of, it's the kind of place people find themselves returning to for all of life's everyday moments. It's a true community staple," said Aaron Ciancone, CEO, Pearle Hospitality. "We've built those relationships in Hamilton, Guelph, and Burlington, and we're excited to do it here. Elora is a community that knows good food, we think Bardō will feel right at home."
Bardō Elora's menu reads like a greatest hits of feel-good favourites: milkshakes, meatballs, hand-tossed pizzas, fresh salads, and a classic banana split for two, with ingredients sourced from local suppliers and made with the kind of care you can taste in every bite. For those who want to take something home, a grab-and-go counter makes it easy to pick-up items to enjoy down at the river or on a bench in the village on a slow afternoon.
Bardō Elora opens this fall inside the Elora Mill's Walser Building, Pearle Hospitality's landmark restoration of one of Elora's most storied addresses, with a full patio along the gorge to follow in Spring 2027 with seating for up to 80 guests.
