Skip your reservations at a fancy restaurant and spend a red hot night at home. <p>To get couples and groups of singles in the mood this <chron>Valentine's Day</chron>, Chef Boome has put together seductive and simple recipes for what he calls a "wickedly delicious" meal.  Recipes include: Kiss me Quick, Squeeze me Slow, Swiss Cheese Fondue, Molten Chocolate Baby Cakes and Seared Scallops over Avocado and Wasabi Mash.</p>

    Seared Scallops over Avocado and Wasabi mash recipe:

    Ingredients
    * 2 avocados
    * 2 teaspoons wasabi peas
    * 1 lemon, juiced
    * Salt and freshly ground black pepper
    * 1/2 Cup bean sprouts
    * 1 tablespoon butter
    * 1 garlic clove, smashed
    * 6 large sea scallops


    Method

<p>Halve the 2 avocados and remove the pits. Spoon out flesh into a food processor and add wasabi peas, 1 tablespoon lemon juice, salt and pepper, to taste. Process until it's a smooth consistency. Cover and place in refrigerator until ready to serve.</p>

<p>Heat a frying pan on medium heat. Add butter and garlic. Once the butter has melted add the scallops to the pan and gently sear until lightly browned. About 1 minute per side. Add Lemon Juice. Spoon some avocado mash on each plate; arrange the bean sprouts on top followed by the seared scallops.</p>
