The Maple Route: Now Across Québec!

    MONTREAL, March 28 /CNW Telbec/ - The Fédération des producteurs
acéricoles du Québec (FPAQ), whose mission includes encouraging year-round
consumption of maple products, is proud to present, for the second consecutive
year, the Route de l'érable and its Créatifs, people with a passion for a
noble product that comes straight from the soil of Québec: maple syrup.
    Great news! This year, with nearly 80 official participants - 50 more
than last year! - the Route de l'érable winds through 20 of Québec's tourist
regions. This means that regardless of where you live or happen to visit,
you'll have a chance to discover a fine variety of foods and original
    Once again this year the Route de l'érable is offering something special:
a cooking contest to be judged by Roland Del Monte, MOF. Créatifs specializing
in pastry-making, bread-baking, chocolate and ice cream will unleash their
imaginations to create mouth-watering maple desserts. First prize will be a
five-day internship with master pastry-chef Del Monte in Bormes-les-Mimosas,

    Who are the Créatifs?

    Selected according to precise criteria and certified by the Federation,
the Créatifs are professionals in the food crafts with an outstanding ability
to use maple products - maple syrup, sugar, butter, taffy or flakes - in
original and often unusual ways.
    Be they chefs who run their own restaurants, pastry-makers, bakers,
specialists in chocolate, deli meats or ice cream, confectioners, caterers or
other proud representatives of Québec's gastronomic culture, these
craftspeople innovate tirelessly to create products or dishes featuring
regional ingredients. People of passion whose creativity is matched only by
their desire for excellence, they focus their talents on introducing others to
the multiple facets of maple in their respective establishments, where
tradition and modernity come together.
    You can recognize the Creatifs by their distinctive logo - an
orange-coloured drop - inspired by the decorative fillip that culinary artists
use as the finishing touch to maple-based dishes. This year the logo will be
even more visible, appearing for example on ready-to-serve foods by the
Créatifs and on lapel pins worn by their employees.
    Besides appearing on our web site,, each region's
maple Créatifs will be listed in a leaflet available at all participating
establishments along the 2008 Route de l'érable, as well at tourist
information centres in Québec and Montréal and certain border crossings.

    Distinguished Maple Ambassadors

    Another first this year: the nomination of ambassadors from here and
abroad. Three renowned culinary figures, devoted lovers of all things maple,
have been chosen to help promote maple products in Québec and around the
world. They are: Roland Del Monte, pastry-chef and master artisan of chocolate
and ice cream in Bormes-les-Mimosas, France, who has been named a "Meilleur
Ouvrier de France" (MOF); Yvan Lebrun, owner-chef of L'Initiale restaurant in
Québec; and Jérôme Ferrer, co-owner-chef of Europea restaurant in Montréal.
All have just returned from representing FPAQ in Japan, where they showed
their peers that maple products truly are of international calibre.
