VANCOUVER, Jan. 25 /CNW/ - This weekend's BC Foodservice Expo will shine
a spotlight on eco-friendly dining with a series of features and events
designed to inform and inspire foodservice operators.
Here are just a few of the ways the Expo is helping BC restaurants go
The Sustainable Restaurant
Created in collaboration with Green Table Network, The Sustainable
Restaurant is a new 900-square-foot walk-through feature showcasing the
latest and greenest in kitchen equipment design - including an energy-
efficient setup that can save 25% on energy bills. Visitors will learn
about easy and affordable ways to reduce water use, divert organic waste,
conserve electricity, reduce cooking/processing time and create a smaller
working kitchen space. No paper or plastic handouts - guaranteed!
Sustainability 101: To a Greener Future
On Sunday, Jan. 27 at 11:15 a.m., André la Rivière, creator of BC's Green
Table Network, will show restaurateurs how a commitment to sound
environmental principles can boost a restaurant's bottom line. From
reducing waste and conserving water to increasing energy-efficiency and
supporting local suppliers, there are dozens of practical ways for
restaurants to build a more sustainable - and profitable - future.
BC Edible Harvest
This feature, located in Booth 825, will showcase some of BC's best local
food products, including: cranberry salsa, frozen fruit from the
Okanagan, snacks made from BC salmon, Fraser Valley honey, bison sausage,
handmade cheeses, organic meats, specialty breads, artisanal pastries,
seafood entrées and vegan "cheese" cake.
BC Winery & Microbrewery Pavilion
From established producers to new niche players, BC's growing beer and
wine industry offers restaurateurs and their customers a bounty of unique
flavours and pairing opportunities. Local producers will be on hand to
offer product samples, suggest pairing opportunities, answer questions
and help place product orders.
