    BANFF NATIONAL PARK, AB, Oct. 29 /CNW/ - Banff's Ryan Rivard has been
named Restaurateur of the Year in Western Living Magazine's Top 40 (Under 40).
Rivard heads up The Bison, " of Banff's brightest new eateries," writes
Canada's largest regional publication in its October issue. "(Rivard) not only
champions local ingredients and Rocky Mountain comfort food on the bistro
side, but his five years of experience with cheesemonger Janice Beaton informs
the general store side of The Bison." The Bison was also named one of Canada's
Top Ten New Restaurants of the Year in 2006 by Where Canadian Rockies and
lauded in CBC Radio Food Critic John Gilchrist's book My Favourite Restaurants
in Calgary & Banff.
    It must have something to do with the fresh alpine air and outdoor
lifestyle, but Banff and Lake Louise chef and restaurateurs' use of fine
regional ingredients, professional expertise, and innovation keeps the local
cuisine scene sizzling hot:

    -  Simple Treasures, a cookbook published this year by Canadian Rocky
       Mountain Resorts Executive Chef Alistair Barnes, features recipes
       using indigenous vegetables and fruits, game meats, and fresh fish.
    -  The Fairmont Banff Springs Hotel has introduced a Club Lounge for an
       "artistic mixology experience" at the Five Diamond-rated restaurant
       The Banffshire Club, where Chef Ian Bens is embracing the art of
       "cuisson" with a focus on the variety cuts of meat.
    -  The Banff Centre unveiled the Three Ravens Restaurant & Wine Bar last
       year, a 64-seat a la carte restaurant show casing signatures of
       creative, local, fresh, seasonal, and colourful fare in every dish.
