Weekends throughout October, this lakeside retreat that helped plant the
growing Savour Muskoka culinary trail is serving up a series of Fall Flavours
Food & Wine escapes. Inspired by harvests from neighboring producers like
Ivanita and Brookland Farms, and seasonal gatherings like the Bala Cranberry
Festival, Deerhurst Executive Chef Rory Golden and his brigade are prepping
hearty, upscale dishes to match with vintages hand-picked from Niagara
An extension of the resort's popular one-off autumn and spring culinary
getaways, the Fall Flavours package offers a gourmet experience in a classic
but very relaxed setting.
"These weekends have three key ingredients," says Golden. "It's all
about taking the time to enjoy great meals, a fresh take on Ontario wines, and
the chance to get outdoors on your own, whether you want to explore nearby
Algonquin Park, or stop by some of our area vendors."
Friday evenings, participants will sit down to casual, "ready when you
are," tapas plates in the cozy Landing Lounge. Each Saturday, a different
featured winery, Peninsula Ridge, Angels Gate, Cave Spring or Henry of Pelham,
will pour their favorite varietals during a late-afternoon tasting.
A four-course pairing dinner will be served in the log cabin-styled
Steamers restaurant. Starting with locally bottled water and fresh-baked
seasonal breads, dinner menu choices include a savory ricotta cheesecake with
Milford Bay trout and caramelized onions, heirloom tomato and purple potato
salads, roast Nipissing pheasant, and grilled strip loin with shiitake
mushrooms picked from oak logs. Hot buffet breakfasts round out the weekend
"Local is the new food destination," notes Golden. "And we're putting
all of Muskoka's fall colors, like pumpkin, walnut and cranberry, as well as
the resort's own honey and maple syrup harvests, right onto your plate."
