MONTREAL, March 28 /CNW Telbec/ - This year the Fédération des
producteurs acéricoles du Québec is running a brand-new contest designed for
the Créatifs de l'érable (maple creators). Roland Del Monte, an
internationally renowned French pastry chef who has been named a "Meilleur
Ouvrier de France"(MOF), is the honorary president of this first-ever
competition for maple cuisine.
This contest is specifically addressed to Créatifs de l'érable who
specialize in pastry-making, chocolate, baked goods and ice cream. The
challenge is to create a maple dessert in accordance with the rules
established by the Federation. The jury will consist of four people, including
two members of the Federation, a journalist and Roland Del Monte himself, and
will reveal the names of the three winners in Autumn 2008. The winners will
add their creations to their regular menus, guaranteeing the future pleasure
of food-lovers here and abroad.
The four members of the jury will evaluate the desserts according to
three main criteria: originality, presentation and taste. Participants must
also comply with the following conditions:
- Develop an original recipe for a dessert, serving six to eight people,
using a 100% pure maple product (syrup, butter, taffy, sugar or
flakes); the number of dishes presented is up to the Créatif, so long
as contest conditions are respected.
- No more than 10 ingredients per recipe may be used; alcohol and maple
essence may be added without being counted among the 10.
The first-prize winner will be offered a five-day internship, to be taken
in 2009, at the pastry shop of Roland Del Monte at Bormes-les-Mimosas, France.
The prize includes transportation, lodging and meals. Second prize is an award
of $500, while third prize is an award of $250.
The contest will run from April 15 to August 15, 2008.
