Chef Anthony Walsh of Canoe named Toronto's best chef at gold at the Gold Medal Plate culinary challenge in support of Olympic and Paralympic athletes



    TORONTO, Oct. 22 /CNW/ - In front of a spirited and well fed crowd of
more than 600, Anthony Walsh of Canoe, was awarded gold at the recent Gold
Medal Plate event held in Toronto. Lorenzo Loseto of George took home silver,
and Claudio Aprile of Colborne Lane won the bronze as 26 Olympic and
Paralympic athletes cheered on the podium winners.
    Walsh was up against Toronto's toughest competition including: Lino
Collevecchio, Via Allegro Ristorante; Jamie Kennedy of his self-named
restaurant; Robert Bartley, Four Seasons Hotel; Susur Lee, Susur; Chris
McDonald, Cava and Michael Stadtlander of Eigensinn Farm.
    Chef Walsh's dish centred his creation around a slice of superbly tender
Nunavut caribou hind. Also on the plate was a tiny tortiere made from the
caribou neck, a sweet-salty purée of Cookstown sunchokes, some amazingly
flavourful Ford Hook mustard greens and a single walnut prepared with a hint
of dark chocolate. Once again, Jackson Triggs Delaine Vineyard was associated
with a medal, this time the Cabernet-Merlot 2005.
    As the city's gold medal-winner, Chef Walsh will represent Toronto at the
Canadian Culinary Championships held next February over an intense three-day
national competition that brings together the winning chefs from each of the

    The event raised more than $200,000 in support of Canadian Olympic and
Paralympic athletes. Nationally, Gold Medal Plates has raised more than $1.5
million in the past three years and has elevated the profile of Canadian
cuisine and wine. The 2007 goal is to raise $1 million over the six week
project in the following seven cities:
