QUEBEC CITY, Nov. 1, 2011 /CNW Telbec/ - After successfully maintaining
its Four Diamond rating awarded by the Canadian Automobile Association
(CAA) and American Automobile Association (AAA) for the past 10 years
or so, Restaurant Initiale, member of Relais & Châteaux, is reaping the
rewards of its efforts and will be the only establishment in Quebec
City to display the highly prestigious Five Diamond rating in 2012.
A superb restaurant
In Canada, only six restaurants earned this distinction in 2011—three of
them in Quebec! It is therefore important to underscore the efforts
made by the restaurant's owners to reach their goals. Very few
establishments in North America and the Caribbean succeed in obtaining
this honour. In fact, only 0.28% of the 58,000 hotels and restaurants
associated with the program have received the Five Diamond rating.

Mr. Lebrun summed up the feelings of the pair, for whom talent and

The importance of details
In order to meet the program's most demanding requirements, a Five
Diamond establishment must offer a "sublime dining experience,"
according to the terms used in the rating guidelines published by the
CAA and AAA. This experience begins the moment customers make contact
with the staff and ends when they leave. Thus, in addition to quality
ingredients and skilful preparation, the presentation and service, wine
list, interior decor, table linens, ambient temperature, music, place
settings and many other details will be carefully considered by the
inspector assigned to evaluate the experience.
And, according to the CAA/AAA inspector, Restaurant Initiale, Relais &
Châteaux, undeniably meets all of these criteria for excellence. "I've
had the opportunity to visit this establishment several times, and each
time I noticed that the service was increasingly attentive and
sophisticated. I'm proud to say that the Initiale, member of Relais &
Châteaux, has joined the ranks of the finest establishments in North
America," he remarked.
CAA-Quebec, a not-for-profit organization founded in 1904, provides
automotive, travel, residential and financial services and privileges
to its 1.1 million members. From the earliest years of CAA-Quebec's

current format has been around since the 1960s.
